Fry the onion and pepper in the olive oil until softened.
Whisk the eggs and the Chillichup together in a large bowl.
Add the eggs to the onion and pepper mix and stir until cooked.
Serve in the tortilla wrap together with chopped coriander and grated cheese.
For extra heat serve Chillichup on side as well.
To turn this breakfast dish into a lunchtime meal serve with guacamole, sour cream and some fresh tomatoes.
