1 Kg British Braising steak cubed into 1.5 cm peices
1 tsp sea salt
3 level tsp Corn Flour
2 Tsp Shut Up Rub ( Chillichup rub if you want it milder)
1 Tsp Cumin ( freshly crushed seeds are best but powdered will do)
1 can of stout ( Guinness or other rich stout)
2 Tsp Marmite
6 cloves Garlic finally diced or pureed.
2 Tbsp Shut Up Chup ( chillichup if you want it milder)
1 Thumb sized peice of Fresh Ginger finally greated
2 Tbsp dark brown soft sugar
To serve
20 small Traditional Corn Tortilla Wraps
2 Avocados
1 Bunch Coriander
1 Fresh Chilli of your choice chopped
1 Fresh red Onion Diced or sliced up to you
1 Fresh lime cut into wedges
Pre heat the oven to Gas mark 6
In a re sealable bag place the Beef, Cumin, Sea Salt, Corn Flour, Shut Up Rub, and massage together untill the beef is well covered you can add a few drops of oil if its looking dry.
mean While Heat up a thick bottomed oven proof pot with a lid and then fry the Beef off until brown on all sides. Do this in batches as if you over croud the pan you will stew the beef and wont get the caramelisation you are after.
Add the guinness, marmite, brown sugar, garlic, ginger and shut up chup to the pot and bring up to a simmer. This should de glaze the pan and add flavour.
Once simmering place the lid on the pot and place in the oven.
Cook for 1 Hour with the lid on then remove the lid give the mix a stur and cook for a further 1.5-2 Hours until the beef has softened and the liguid reduced by half turning thick and sticky.
when the beef is ready place the lid back on turn the oven off and leave the pot in the cooling oven while you toast off your tacos and plate up your garnish.
I like to go family style for serving so let people make there own tacos
toasted tacos then a little of the sticky beef mix some avocado fresh red onion and some coriander don't forget a squeeze of lime.
If you have opted for the milder version with the Chillichup rub and sauce and you have friends who like a little heat you can always offer them a drizzle of shut up chup or Flaming Chup as a garnish just to give them that extra kick.
